In collaboration with our restaurant, the Rüsterei, we have created the “Cuisine nature” line. This unique concept reflects our shared vision: the conscious use of natural resources, from the careful selection of producers to the careful processing of ingredients and the avoidance of food waste.
Nature is a fine thing. That's why we share the enthusiasm of all producers who treat nature and animals with extra respect and care. And we process their high-quality products in our kitchen with exactly the same respect. The pure and natural taste of the products is preserved. The culinary experience is more intense. This makes eating fun and meaningful.
Why Cuisine nature?
Regenerative agriculture
Cuisine nature draws on the deep roots of regenerative agriculture, which not only uses the soil, but also nourishes and heals it. This conscious cultivation transforms farmland into a thriving oasis of biodiversity. It improves soil quality, promotes water retention and gives us a bountiful harvest full of vitality and energy.
High quality
Every dish in our Cuisine nature collection is a tribute to the purity and authenticity of its origins. The ingredients come from a soil that is lovingly nurtured to bring out the full spectrum of nutrients and flavors. These culinary treasures offer an incomparably rich and deep taste experience that pampers the palate and nourishes the soul.
Sustainability
Cuisine nature goes hand in hand with the vision of a more sustainable future. Our commitment to environmentally friendly farming methods minimizes the impact on our planet and creates a balance between nature and food. This gentle approach to the earth is reflected in every bite and invites you to become part of a life-affirming movement that honors and protects the planet.
Producers
We work with producers who ensure fertile soils and more biodiversity. Where the young animals grow up with their mothers, can move freely on fresh pastures and die with dignity. We visit our producers regularly, know their animals by name and help with the harvest.
Z'Alpenblick
At the Z'Alpenblick farm at the highest point in Hirzel, farming is done the way it used to be done: in balance with nature, with respect for life and in the knowledge that healthy growth takes time. The four-person team does everything by hand, encouraging and relying on the power of millions of microorganisms to create humus for healthy soil and nutrient-rich vegetables. Their calves grow up with the horned mother cows, spend the summer on the pasture and the winter in a free-range barn. And they are allowed to die where they were born, on the farm, respectfully and stress-free.
Rinderbrunnen
In the Zurich upper region, 500 laying hens can always scratch and peck at fresh pastures. This is made possible by the mobile henhouse at the Rinderbrunnen farm. All the chicks are reared on the farm - and that doesn't just mean the females, but also the males. But that's not the only thing that sets Judith and Martin's farm apart from others. There are many fruit trees on their farm. These standard trees require a lot of care and are therefore disappearing more and more from our landscape. As with all branches of the business, the Rinderbrunnen farm also adheres strictly to the Bio Suisse guidelines for vegetable growing. Over 30 different types of vegetables and herbs grow in the open field and in the greenhouse.
Slow Grow
Slow Grow plants grow at a natural pace and are more resistant to fungal diseases and insects. Slow Grow practices and develops regenerative “mosaic agriculture”. A cultivation method in which biodiversity is promoted, the soil is almost always covered with a layer of plants and no pesticides or fertilizers are required. Slow Grow cultivates vegetables, arable crops and specialty crops on over 20 hectares in Gossau, Mönchaltorf and 40 hectares on the Züriberg.
Gut Rheinau
The arable land at Gut Rheinau farm is cultivated in a varied way using an 11-year crop rotation. The aim is to achieve a balanced relationship between humus depletion and humus build-up. Gut Rheinau is located in the middle of the striking and idyllic Rhine meander. It consists of a tenant community of nine shareholders, 16 employees and seven apprentices. From vegetable cultivation and animal husbandry to landscaping, the farm is consistently biodynamic. But that's not all: the farm is heavily involved in agricultural research, helping to ensure the availability of organic seeds, among other things.
Terramay
When David and his team began their work, the 560 hectares of land in the tranquil village of Rosário in Portugal resembled a desert. It has since become our impressive “Terramay” farm, where fruit, vegetables and cereals grow naturally. Without genetically modified seeds, without chemicals. Terramay consistently follows the principles of regenerative agriculture. The team passes on its knowledge to the community in the region and documents it so that it can be passed on to future generations.
Cuisine nature at the Rüsterei
Since May 2024, the Rüsterei in Sihlcity has been all about Cuisine nature. Over 80% of the ingredients used there come from organic or regenerative farming - a strong commitment to quality and environmental awareness. In the kitchen, care is taken to process the ingredients in such a way that their natural flavors and nutrients are preserved as much as possible.
